1 package fresh fettuccine
1.5 small lemons (or one large one) rolled for juicing
1 cup of chopped onion
Chunk of Romano cheese 1" x 3" finely grated
2-3 TBSP fresh basil, chopped fine (three or four large stems)
2-3 TBSP dried parsley (about a palm full but scant)
2 TBSP butter

PICKLED BEETS AND ONIONS
4 lb. (3 qt.) sm. beets
3 med. onions, sliced
3 c. cider vinegar (5 to 6% acidity)
2 c. water
1 c. sugar
1 c. packed light brown sugar

1/2 C Crisco
3/4 C Jam (with seeds)
1 1/2 C Flour
2 eggs
1/2 C buttermilk
1 tsp each of Cinnamon, Nutmeg, Allspice and Cloves

DH's family are lentil (and wheat) farmers and this is the Lentil Casserole recipe she gave me from the heart of Lentil country
1 1/4 cups of Lentils, cooked and drained
1 pound ground beef, browned
1 small onion, chopped
2 - 15oz cans stewed tomatoes
1/4-1/2 cup brown sugar
2 TBSP teriyaki sauce
dash Liquid Smoke
4-6 Bacon Strips
mix all ingredients and place in 9 x 13 baking dish, place bacon strips on top and cook in 350 oven for 30-45 minutes
1 C Green Onion (chopped)
1 clove garlic
4 TBSP Oil
4 C chicken broth
1 C 1/2 & 1/2 or milk
4 Servings instant mashed potatoes
1 med. carrot (shredded)
pepper to taste
in medium saucepan saute onions (reserve some of the greens for garnish) and garlic in oil, add broth and bring to roiling boil.
Remove from heat and add potato, milk and carrot, cook on low until fully heated. add pepper and garnish with green onion and shredded cheese (optional)
it's fast easy and delish!
