I get them over the holidays and they are super tasty with a little extra effort. Believe it or not, my husband and I can get at least two meals out of the tiny little loaf. Don't let size fool you, it's really filling!

I bake it in a covered casserole dish with a basting mix of butter, veggie chicken broth, apricot jam, fresh herbs (rosemary and oregano bundles), and chopped up onions. I baste it a few times while it's cooking and then about half way through I'll take it out and turn it so it can crisp up on both sides, then pop it back in the oven 'til it's done.

Once it's done, I remove the herb bundle from the dish and pour the rest of the basting mix into a pan on the stove. With a hand mixer, I'll blend it all down to a gravy and add more seasonings to taste, letting it simmer for a bit.

Even though it comes 'stuffed', I still make stuffing on the side, because there is nothing like homemade stuffing!
